Description:
Join us at Birch & Barley, Wednesday November 17th at 7 pm as we welcome two very special guests for an unprecedented collaborative beer dinner! Matthias Trum, owner of the world-famous Brewery Tavern Schlenkerla, will preside over a four-course dinner artfully prepared by Schlenkerla’s Chef Wolfgang Theil and Birch & Barley Executive Chef Kyle Bailey. That’s right, Chefs Wolfgang and Bailey have been corresponding on this authentic Bamberg menu and they will work side-by-side that evening to showcase the wonderful flavors of Franconia. Meanwhile, Matthias will regale us with the history of his impressive brewery and tavern, as well as speaking about each of the 6 beers we will be offering with the collaborative menu. In many ways, we will be bringing the experience of visiting Schlenkerla stateside; we are seeking to authentically showcase one of the finest, and most classic, examples of the pairing pleasures afforded by tasting real beer in congress with real food.

Traditional Franconian Potato Soup with Smoked Pork Belly accompanied by Schlenkerla Helles Lagerbier (Bottle)
Bamberg Style Onion with Mashed Potatoes and Smoke Beer Sauce accompanied by Schlenkerla Rauchbier Märzen (Bottle)

About Brewery Tavern Schlenkerla: In the middle of the old part of Bamberg, directly beneath the mighty cathedral, one can find the Historical Brewery Tavern Schlenkerla. First mentioned in 1405 and now run by the Trum family in the 6th generation, it is the fountain of the Original Schlenkerla Smoke Beer as well as a restaurant long lauded for fine Franconian cuisine.
About Smoke Beer (Rauchbier): For thousands of years, maltsters had no choice but to dry their grains during the malting process over open fires. In Franconia, the kindling of choice has always been beech wood, and its smoke imparts a wonderfully spicy and meaty flavor in the malted grain and resultant beer. While most of the malting—and therefore brewing—world has gone away from direct-fire malting, Schlenkerla has continued to both smoke malt and employ smoked malt in the brewing of their fine brews. Their range of beers stands among the most singular in the world.
