"The World of Jerome Rebetez"
Jerome Rebetez is the zany brew-master of Brasserie des Franches-Montagnes- one of the breweries that is at the forefront of beer innovation (including barrel aging beer).
Like Jerome’s personality- his beers have strong characters, lots of body, complexity and finesse.
The New York Times rated “L’Abbaye de Saint Bon-Chien one of the best beers in the world”; no small feat for a brewery that still bottles beer by hand and produces limited quantity of all their products.
Jerome always works to produce the best by choosing the best raw material and he focuses on quality ingredients.
We will taste 4 of Jerome’s product showcasing the wide range of his work. One of the product will be a new product Jerome is testing.
“The Battle of the Barrels”
As Jerome studied oenology prior to moving over to beer brewing, so he is always working to concoct products comparable to some of the world’s best wines. This led Jerome to be one of the first to barrel age beer in barrels other than a strong spirits barrels (such as using wine barrel). He also enhanced the technique by blending barrels of different grapes similar to what occurs during wine making.
B. United International has worked with Jerome over the year and has also started our own line of limited edition barrel aged beers called Zymatore .
In this section we will take you through the process of barrel aging utilizing our Zymatore line through comparing the original beers to barrel aged at various points in their development: early, mid & late stages. To finish, we will taste Jerome Rebetez’s “L’Abbaye de Saint Bon Chien 2011” (One of the world's best beer as stated by the NYTimes). (6 beers tasted)
To end the class we will open a vintage 2006 L’Abbaye de Saint Bon Chien. What would a 5 year old barrel aged beer taste and smell like?
Total beer tasted: 11 beers (including some 10% alc/vol products) The Zymatore products will be picked closer to the class, as Zymatore is currently aging and changing.

Brewmaster and owner of Brasserie des Franches-Montagnes (BFM), Jerome Rebetez's brewery has been one of the pillars of the Swiss craft beer renaissance being one of the first to start barrel aging. Originally having studied enology, he changed to beer brewing because it allowed for more creativity. He always works to produce the best- raw materials are carefully chosen and he always focuses on quality ingredients, always original and difficult to integrate. Thus, his artisan ales are individualistically crafted with strong character, revealing lots of body, complexity, and finesse. Jerome is raw, comical, and extremely passionate. An afternoon spent with Jerome is not to be missed!
