This is a top fermented beer which experiences a secondary fermentation in bottle. Intense amber with red highlights and a foamy cream colored head. Its complex nose has aromas of candied fruit (citron and orange) and spices (anise, black pepper and nutmeg) with balsamic notes. Warm, full bodied and noticeably sweet in the mouth, this beer is dedicated to Christmas. The ideal companion to bring in the sunrise sitting by a warm fire sheltered from demons’ incursions.
We liked the idea of dedicating this crisp Christmas beer to a demon.
The unconventional Yule time tale commonly told in Ladin lands refers to the legend of Krampus who, on the night of December 5th, would terrorize the Alpine villages rattling their black chains, cloaked in ram’s fleeces with goat horn heads and cloven feet. A prelude to jolly old Saint Nicolas arrival who will bring peace and gifts to the all community.
Suggested pairings: Delightfully paired with the typical Italian Christmas desserts such as Panettone and Pandoro , this holiday beverage complements the soft French cheeses of Pont L’Eveque and Reblochon. A perfect ending to Christmas dinner.
