Soil: Clay and marl of the Oxonian, from Normandie
Variety of apples: 80% of bittersweet apples, 20% of acid apples
Aging: Esprit de Pomme is aged 3 months in old oak casks in order to keep as much as possible the fruit character of the distilled cider. We would not release anything younger because blending and roundness requires this minimum length of aging in wood.
Shelf life: Very long. As long as the bottle is corked to avoid evaporation
Color: very pale yellow
Appearance: Limpid. However, Esprit de Pomme can become slightly hazy as it is not chill filtered
Nose: Soft fresh. French baguette, butter and spices. Delicate
Taste: Fresh apple, spices and pepper. Powerful and lingering
Serving Suggestions:
- As an Aperitif: on its own, over ice or with a drop or two of water. A very good eau-de-vie base for cocktails.
- With Food: Serve ice cold with marinated or smoked fish.
- With dessert: With dark chocolate cakes and apple sorbets.
