Founded in 1890, it has been owned by the Rudi Hirz family for five generations. In 1989, they became famous for re-introducing dinkel (spelt) into the brewing process. Apostelbraeu Brauerei has one of the oldest (maybe the oldest) malting operation still in operation - installed in 1874, it allows them to get truly FLOOR-MALTED barley malt.
