Hitachino Nest Japanese Apple Cidre

Bottle-conditioned Cider from 100% Japanese apples.
6% alc./vol.
Apples grown in the northern part of Japan, especially Fuji apples, are very well known for their
sweetness, low acidity and very good taste. There are 50 apple farms near Kiuchi Brewery and Kiuchi purchases almost 10 tons of local apples, mostly Fuji variety, from each harvest.
Come Autumn the farmers bring their apples to Kiuchi Brewery where they are crushed and pressed.
After pressing, Kiuchi’s brewmaster adds Sake yeast to allow the apple juice to ferment at very low temperature ( 10°C =49°F ) for around 1 month.
After primary fermentation the cider is transferred to tanks and matured for another 6 months.
Then bottled and refermented at 20°C = 68°F.
After the 2nd fermentation is complete Kiuchi Brewery stores the cider bottles another 2-3 months at cold temperatures to achieve perfect harmony of flavors and aromas.
